What our croissants are like
We bake them the traditional way. The flaky pastry has many thin layers that turn crisp and delicate in the oven. Inside is a white poppy seed filling with nuts and raisins. On top go icing and chopped nuts. The croissant is shaped like a horseshoe.
Like all Colbergcoffee bakes, they are handmade with no artificial additives. They taste best on the day you collect them, with black coffee or espresso, which balances the sweetness of the poppy seed and icing.

Where St Martin’s croissants come from
The custom of baking croissants for 11 November comes from Poznań. The shape recalls the legend of the horseshoe lost by St Martin’s horse. The name “rogal świętomarciński” is protected in the EU and may only be used by certified bakers from Greater Poland, so we call ours St Martin’s Day croissants. The recipe and taste are traditional; only the place they are baked is different.
11 November is also Polish Independence Day, and in many homes the croissants sit on the table next to the St Martin’s goose.
Coffee with your croissant
A sweet poppy seed croissant goes best with unsweetened coffee: espresso, americano or filter coffee from our roastery. Milk drinks from the autumn menu work too, but choose a less sweet version. You can pick up beans for home brewing when you collect your croissants.
